What are microgreens?

The latest trend in the food world, microgreens are young edible plants with their first set of true leaves produced from the seeds of vegetables and herbs. Ranging in size from one to two inches long including stems and leaves, microgreens can have surprisingly intense flavors.

Why microgreens?
Microgreens are tender, highly nutritious and packed with flavor. They are very versatile and can be used as a salad and to enhance entees and other side dishes. Pile them onto your favorite pizza or add them to sandwiches, wraps, soups, sauces and other dishes for bursts of flavor and nutrition!

Are microgreens the same as sprouts?
Microgreens differ from sprouts in a number of ways. Microgreens are grown in soil. Sprouts are grown in water in very low light conditions and consumed as a mass of roots, stems and underdeveloped leaf buds. Microgreens are grown for several days longer than sprouts and are cut and packaged without the roots. They are harvested at the ideal stage where flavor and nutritional value are at their peak. They have much more developed flavors, colors and textures.

What types of plants are grown as microgreens?
Many types of greens are grown as microgreens. We grow pea shoots, pak choi, purple cabbage, purple mustard, purple and pink radish microgreens, basil, corn shoots, amaranth and swiss chard. Tossed together or layered,  they make a wonderful salad. Individually they provide many opportunities to add excitement to your favorite dishes.

What is the optimal way to store microgreens prior to use?
For best results, refrigerate at 38-40 degrees in a closed air-tight container.

How long can microgreens last in the refrigerator?
Shelf life will vary depending on the variety but most microgreens will last at least 5-8 days if they are refrigerated at the right temperature. Most of our varieties can last up to two weeks when properly stored.
